Bitter began his lacrosse career at Manhasset High School, where he earned All-American honors as a senior. He spent one post-graduate year at the prestigious Deerfield Academy in Deerfield, Massachusetts, before heading off to make his mark at the University of North Carolina, Chapel Hill. Billy started every game from his sophomore year forward and was a two-time first team All-American. He totaled an impressive 99 goals and 76 assists with 172 ground balls as a Tar Heel cementing his reputation as one of lacrosse's premier attackman.
